Frequently Asked Questions
Everything you need to know about the Gravity Series 800
The Gravity Series® brings together authentic charcoal flavor with digital precision. You get rich, smoke-infused taste with a built-in digital control panel that sets and holds your temperature — no manual vent adjustments needed. It's easy to light with fan-assisted ignition, versatile for smoking at 225°F or searing at 700°F, and features the GravityFed™ Hopper that holds up to 18 pounds of briquettes for up to 18 hours of consistent heat at low temps.
• 225°F = up to 18 hours
• 700°F = up to 3 hours
The hopper holds up to 12 pounds of lump charcoal or 18 pounds of briquettes, giving you 15+ hours of consistent heat without refueling — perfect for overnight briskets or all-day BBQ sessions.
The GravityFed™ Hopper is a vertical chamber that holds charcoal and uses gravity to feed fuel down as it burns. Once lit, the fan-assisted system controls airflow and maintains your set temperature. As coals burn from the bottom, new fuel drops down automatically — no manual refueling needed during long cooks. This delivers consistent heat, cleaner burns, and less charcoal waste.
Yes! Control grill temperature through the digital control panel or the Masterbuilt App. The app lets you monitor and adjust grill temp, check meat probe temperatures, and follow recipes — all from your phone, whether you're in the backyard or inside prepping sides.
Yes, it's very important to preseason before cooking to burn off manufacturing oils and chemicals. Fill hopper ¼-½ full, run at 250°F for 60 minutes, then 400°F for 30 minutes. Cool completely, apply light cooking oil to all grates and interior surfaces, then repeat at 350°F. Frequent seasoning also helps prevent rusting.
Close all lids, press and hold the Power button until it powers off, then insert the two shutdown slides (small slide through bottom slot, large slide through upper slot with "M" facing upright). This smothers the fire and lets you save unused charcoal for your next cook. Wait until the grill is completely cool before covering or storing.
No, slides should not be left in the unit while cooking, could damage the slide and the unit. Make sure to pull slides completely from the unit and store on the side shelf hook while cooking.
Yes, it's normal for heat to escape when the lid opens. Under 500°F, the DigitalFan runs continuously to maintain temperature. Above 500°F, the grill defaults to 500°F for safety, then returns to set temperature once the lid closes. Use the manual Pause Function button to prevent temperature spikes during lid openings.
For On-Demand smoke, add 1-2 chunks (no larger than your fist) directly to the Ash bin, this will last approximately 2-3 hours. For Controlled smoke, add four (4) pounds of charcoal and this one (1) wood chunk, creating layers of charcoal and wood chunks.
Frequent seasoning prevents rust. If rust occurs, clean with a steel brush, apply vegetable shortening, and heat as indicated in preseasoning steps. Check your grill periodically even when using a cover to avoid moisture buildup that causes rust and corrosion.
